Special-purpose wheat flour for pizza dough is a soft flour of exceptionally white color and fine granulation. It is intended for preparing the highest-quality dough for pizza bases.

Through fine milling, a white flour is obtained. By removing the grain bran and germ, the vitamin content is reduced; however, this is precisely what gives the flour its excellent baking properties.
